Pear and Walnut Tart

February 9, 2011

Usually there are no pear desserts in this house as the pears get eaten before that can happen.  This week I did plan ahead and bought double the amount.  It will be the plan for the future.  A nice change from a typical apple pie and I love the combination of pears with walnuts, however pecans or almonds would be good too.

Pear and Walnut Tart

  • 1 One Crust Pie Shell (or a purchased one)
  • 3-4 Pears (peeled, cored and cut in small pieces)
  • 1 T. Fresh Lemon Juice
  • 1 T. Plus 1 t. Cornstarch
  • 4 T. Light Brown Sugar
  • 1/4 t. Ground Cinnamon
  • 1/2 C. Walnuts (chopped) (Optional or use Pecans, Almonds)

  1. Prepare pie crust; set in tart pan
  2. Preheat oven to 425 degrees
  3. In a large bowl toss the pears with the lemon juice; add the cornstarch, brown sugar and cinnamon and toss thoroughly to coat the pears
  4. Add the walnuts and toss again; set aside
  5. Add the pear mixture to the tart pan and bake at 425 degrees for 10 minutes
  6. Lower the temperature to 350 degrees and continue to bake for about 40 minutes (pears will be tender and crust golden brown)
  7. Let cool before cutting
  8. Serve with a scoop of vanilla ice cream

(Serves 8)
