Spinach Bacon and Tomato Tart

If you don’t go out for brunch make a special brunch for yourself.  Easy and rewarding.  Today I had some coleslaw with the tart but a fried or poached egg is good too.  Make it for lunch or dinner as well for a great healthy meal.

Spinach Bacon and Tomato Tart


  • 1 Pie Shell (recipe below) (or purchased pie shell; defrosted)
  •  1/2 C. Jarlsberg Cheese (or substitute cheese of your choice)
  • 1/2 lb. Bacon (cut in 1″ pieces)
  • 2-4 Tomatoes (sliced)
  • 2 T. Unsalted Butter
  • 10 oz Bag of Spinach
  • Salt
  • Freshly Ground Pepper 


  1. Put pastry in tart plate
  2. Saute the bacon until crispy; drain on paper towel; set aside
  3. Saute the spinach in 2 T. butter for about 4-5 minutes; set aside
  4. Put a layer of cheese on the bottom of pie shell
  5. Add the spinach; bacon and tomatoes
  6. Salt and pepper to taste
  7. Bake at 350 degrees for about 40-50 minutes

One Crust Pastry


  • 1 C. Flour (sifted)
  • 1/2 t. Salt
  • 6 T. Shortening
  • 3 T. Ice Water


  1. Sift flour and add salt
  2. Cut the shortening into  the flour
  3. Add water gradually and toss mixture with a fork after each addition
  4. Mix until the sides of bowl are clean and form it into a ball
  5. Roll out on floured board
