Seven Bean and Country Sausage Soup

A friend brought me a bag of this seven bean mixture so a couple of new soups were on my menu idea list.  There is a Polish deli (A Taste of Europe) a few blocks away that has great sausage and I had lots of spinach in the refrigerator.  It was a great idea.  A very hearty, rich, thick and tasty big bowl of soup.  Put the spinach in at the last-minute so it just wilts but will still be fresh and bright green.

Seven Bean and Country Sausage Soup


  • 2 Bacon Strips (diced)
  • 1/2 C. Onion (chopped
  • 3 C. Water
  • 1/2 lb. Smoked Polish Sausage (sliced) (this one was spicy)
  • 2 C. Seven Beans (prepare from package directions-overnight method or quick-soak)
  • 1 10 oz. Bag of Fresh Spinach
  • Salt
  • Freshly Ground Pepper


  1. Cook the bacon over medium heat until crisp; remove bacon and drain on paper towels
  2. Saute the onion in the bacon drippings until tender
  3. Add the water and beans and bring to a boil; simmer for about 15 minutes
  4. Stir in the sausage, salt and pepper to taste and heat thoroughly
  5. Just prior to serving stir in the spinach and bacon and heat again
  6. Serve immediately in warmed bowls

      But it is easy because they come in one bag already mixed up/just prepare as one type of bean/excellent!
