Roasted Broccoli and Shrimp

I bought two of my favorite things, shrimp and broccoli.  And then I thought with what?  All by themselves was the answer.  If you like these two ingredients this is the “KISS” recipe (keep it simple stupid).  Both taste fresh and full of simple flavor.  Just another basic, leave it alone recipe.

Roasted Broccoli and Shrimp

Ingredients

  • 1 Head Broccoli (wash, cut into florets)
  • 1 lb. Lg. Shrimp (shell and devein, tails off)
  • 4 T. Extra Virgin Olive Oil
  • 1 t. Coriander Seeds
  • 1 t . Cumin Seeds
  • 1 1/2 t. Kosher Salt
  • 1 t. Freshly Ground Pepper
  • 1/8 t. Chili Powder
  • 3 Lemons (2 for garnish)

Preparation

  1. Preheat oven to 425 degrees
  2. Toss the broccoli in a large bowl with 2 T. oil, coriander, cumin, 1 t. salt, 1/2 t. pepper and chili powder
  3. In another bowl combine shrimp, 2 T. oil,  juice of 1 lemon and a little lemon zest and the remainng salt and pepper
  4. Spread the broccoli florets in a single layer on a baking sheet; roast for 10 minutes; remove from oven and add the shrimp
  5. Return to oven and roast (tossing once halfway through) until shrimp tury just opaque and broccoli is tender and golden around the edges (about 10 minutes)
  6. Serve on a warmed plate and garnish with lemon

(Serves 2) (Recipe says 4, but no way, unless it is one of many courses)
