Baked Potato with Sour Cream and Caviar

Just a photograph (good or bad) of this potato is enough.  (Simple, Elegant and Rich)

Baked Potato with Sour Cream and Caviar


  • 4 Baking Potatoes
  • 1-2 T. Unsalted Butter plus 2 T. to mash
  • Sea Salt
  • 12 oz. Sour Cream (divided)
  • 1/4 C. Chives (chopped)
  • 4 oz. Caviar
  • Fresh Parsley (for Garnish)


  1. Preheat oven to 350 degrees
  2. Wash and dry potatoes
  3. Rub potatoes with butter; sprinkle with salt
  4. Bake for about 50-60 minutes; remove and let cool until able to handle
  5. Remove potato and put in a bowl
  6. Add 2 T. butter, 4 T. Sour Cream, some chives and roughly mash
  7. Return mashed potato mixture to potato
  8. Prior to serving return to oven and heat approximately 10-15 minutes to heat thoroughly
  9. Serve on warmed plate; add a T. of Sour Cream and a large dollop of caviar on top of each potato
  10. Garnish with parsley
