Shrimp Scampi Linguine

I am a shrimp lover and make lots of different recipes with this wonderful shellfish. Whether it be cold or hot, appetizers, soups, or breakfast, lunch and dinner it is always welcome at the table.   This is a well known favorite and simple and fast to make.  Just a few ingredients and you have an elegant dinner.

Shrimp Scampi Linguine


  • 1 lb. linguine
  • 3-4 Lemons (2 for Garnish)
  • 4 T. Olive Oil
  • 4-5 T. Unsalted Butter (more if necessary)
  • 2-4 Garlic Cloves (minced)
  • 2-3 Shallots (chopped)
  • 1/2 C. White Wine
  • Salt
  • Freshly Ground Pepper
  • Fresh Parsley (some chopped/some for Garnish)


  1. Peel and devein the shrimp (remove tail-optional)
  2. Heat the water for linguine; cook al dente, drain and set aside 
  3. Saute garlic and shallots in half the oil and butter in a large pan for a couple of minutes until tender
  4. Add shrimp to the butter and oil mixture for a couple of minutes (until shrimp begin to turn pink)
  5. Remove the shrimp; set aside and keep warm
  6. Add the additional oil, butter, white wine and juice of 2 lemons; bring to boil; lower heat
  7. Add the shrimp, linguine and chopped parsley and thoroughly heat
  8. Salt and pepper as desired
  9. Serve immediately in a warmed pasta bowl and garnish with fresh parsley and lemons
