Apple, Onion and Walnut Saute

I cannot have Oktoberfest without some apples. Add a lot of onions, a bit of brown sugar and walnuts and that will make me even happier. A savory side dish with a touch of sweetness that not only goes so well with the Oktoberfest meal of Bacon Wrapped Bratwurst, along with some Sauerkraut with Bacon and Onions, it is also fabulous with many pork and chicken meals. This will also make a delicious stuffing for many winter meals, but for stuffing I would definitely peel the apples and dice them. For this side dish I enjoy the look and flavor of the apples with the skins intact.
Apple, Onion and Walnut Saute
Ingredients
- 2 Medium Onions (sliced)
- 1-2 t. Brown Sugar (use discretion)
- 2 T. Butter
- 2-3 Apples (cored) (Optional-peel apples)
- 1/4 C. Walnuts (chopped)
- 1/4 t. Salt
- 1/8 t. Freshly Ground Pepper
Preparation
- In a small saucepan cook the onions with the brown sugar and butter over medium heat (about 10 min.)
- Stir in the apples, salt and pepper; cover and simmer about 10 min.
- Stir in the walnuts and heat thoroughly
- Plate on a warmed bowl or add to a main platter and serve immediately
