Fried Egg with Black Beans and Rice

Had a wonderful dinner last night which included black beans and white rice.  So that means a wonderful breakfast with some of the leftovers (just need to fry the eggs).  Some great breakfasts come in many forms.  This one is so easy it is ready in 5 minutes, maybe 6 if you want your egg “over”.  This meal is one of the reasons I always make extra rice and black beans but I have used canned black beans and leftover rice from Chinese takeout as well.

Fried Egg with Black Beans and Rice

Ingredients (per person)

  • 1/2 C. White Rice (leftovers)
  • 1/4 C. Black Beans (leftovers), more if you like (canned black beans an alternate)
  • 1 Large Egg
  • 1 t. Butter
  • Salt and Freshly Ground Pepper

Preparation

  1. Set up your rice and beans in a serving dish
  2. Heat butter in fry pan, fry the egg to desired consistency
  3. Microwave the rice and beans(about 2 minutes)
  4. Add egg to the rice and beans

(Serves 1)
