Spinach and Juliette Tomato Salad

A refreshing end to a steamy day.  Helped myself to some tomatoes in the yard, washed them (the biggest task of the meal) and mixed up one of my happiest salad dressings that I love with spinach.  This is a clean cut, no drama salad and tastes exactly that way.  Each flavor is distinct on its own, simple flavors rule.

Spinach and Juliette Tomato Salad

Ingredients

  • 1 lb. Fresh Spinach
  • 1 pt. Juliette Tomatoes (or tomatoes of your choice)
  • 1/2 Red Onion (chopped)
  • 12 Black Olives (halved) (or more)
  • Salt
  • Freshly Ground Pepper

 Preparation

  1. Place spinach on a chilled plate
  2. Add the tomatoes and olives
  3. Sprinkle with the red onion
  4. Salt and pepper to taste
  5. Drizzle with the dressing and serve immediately

“Pelican’s Dressing” (Honey Mustard Dressing)

Ingredients

  • 10 oz. Mayonnaise
  • 4 oz. Vegetable Oil
  • 2 oz. Honey
  • 2 oz. Dijon Mustard
  • 1 Lime (juiced)

Preparation

  1. Mix all ingredients together in a bowl and chill until ready to serve

(Serves 2-6)
