Italian Sausage Rolls with Peppers and Onions

I recently went to a plant sale at Mounts Botanical Garden here in West Palm Beach and after hours of enjoying all the different plants and buying a few some food was definitely in order, like immediately.  My friend was quick to find a food stand with sausages and we found a nice picnic table by the water and in the shade.  I could only eat one so of course I had to get the ingredients, come home and make my own the next day.  I think they are always better at home since you can adjust the seasonings to your liking, but they are always delicious wherever you get them.

Italian Sausage Rolls with Peppers and Onions

Ingredients

  • 6 Italian Sausages (mild or hot)
  • 4 Bell Peppers (washed, cored and cut into strips) (any or all colors)
  • 2 Medium Onions (sliced)
  • 2 Garlic Cloves (minced)
  • 2 Tomatoes (peeled and diced)
  • 2 T. Extra Virgin Olive Oil
  • 2 T. Unsalted Butter
  • Pinch of Red Pepper Flakes
  • Salt and Freshly Ground Pepper
  • 6 Hot Dog Rolls (or rolls of your choice)
  • Preparation

    1. Saute the onions and garlic in the butter until translucent
    2. Add the peppers, onions and 1 T. oil to the pan and continue to saute
    3. Add the tomatoes and heat thoroughly
    4. Add salt, pepper and red pepper flakes to taste
    5. Add butter and oil to a grill pan and bring temp to medium-high
    6. Warm rolls in a 200 degree oven
    7. Sear the sausages on all sides and heat thoroughly
    8. Remove sausages from heat
    9. Remove rolls from oven and put one sausage in each roll 
    10. Transfer a heaping tablespoon (or more) of the peppers and onions on top of the sausage 

    (Serves 6)
