Coleslaw and Juliette Tomatoes

It is long past tomato season here in Florida but I do have a couple “Juliette Tomatoes” trying to make it through enough to bring a great tomato burst to salads.  If they make it through August and September cools just a little they will be okay.  Sometimes I am surprised in September to lose plants after the heat of the summer, but I assume “hey just cannot take it anymore”.  I feel the same way some days in September.  I love coleslaw with tomatoes, but then, I love both.  The tomatoes make a nice surprise in your mouth with a very basic slaw.  It goes great year round with many main dishes.

 

Coleslaw and Juliette Tomatoes

Ingredients

(For the Slaw)

  • 1 Cabbage (shredded)
  • 1 Carrot shredded)
  • 1 Onion (grated)
  • 1 C. Juliette Tomatoes (or your choice)
  • Lettuce Leaves (for garnish)

(For the Dressing)

  • 1 1/4 C. Mayonnaise
  • 1/3 C. Sugar
  • 1/4 C. Vinegar
  • 1/4 t. celery seed
  • Salt
  • Freshly Ground Pepper

Preparation

  1. Mix cabbage, carrot and onion in large bowl
  2. Add dressing ingredients in separate bowl and whisk
  3. Combine with the cabbage mixture and add salt and pepper (chill until ready to serve)
  4. Place the lettuce on a chilled plate
  5. Add the coleslaw and tomatoes and serve

(Serves 6-8)
