Strip Steak with Bacon and Mushroom Sherry Sauce

A delicious strip steak is good just on its own but to enhance the steak for a special dinner this sauce will impress any guest.  Someone was telling me about a mushroom sherry sauce and I remembered this recipe which was perfect for the “steak lover” guest about to show up at my house.  Mushrooms and bacon are always a welcome sight for a steak dinner but the added combination of the sherry makes it a smooth and unexpected flavor for your guests. 

Strip Steak with Bacon and Mushroom Sherry Sauce


  • 2 Boneless Strip Steaks (about 10-12 oz.)
  • 4 Slices Bacon (cut in 1″ pieces)
  • 1/2 lb. Mushrooms (sliced
  • 1/8 C. Steak Sauce
  • 1/8 C. Dry Sherry
  • 1 t. Brown Sugar
  • 1/4 t. Garlic Powder
  • 2-3 Sprigs of Fresh Rosemary (save some for garnish)
  • Salt
  • Freshly Ground Pepper 


  1. Cook the bacon in a large fry pan on medium heat until crisp
  2. Remove bacon from pan and place on paper towels, reserving 2 T. of the drippings in the pan
  3. Add mushrooms to bacon drippings and cook until tender (about 5 minutes) stirring occasionally
  4. Add the bacon, steak sauce, sherry, garlic powder and sugar to the pan and mix well
  5. Bring to a boil, reduce heat to medium low and simmer for 5 minutes
  6. Add  a few pieces of the fresh rosemary
  7. Cover to keep warm
  8. Salt and pepper both sides of steak
  9. Sear steaks on both sides and then cook to desired doneness (about 10-12 minutes for medium rare)
  10. Plate the steaks on warmed plates and top with the sauce, garnish with sprigs of fresh rosemary (served with roasted garlic and rosemary red potatoes)
