Melon and Blueberry Fruit Salad in Rum-Lime Sauce

It has been a  long week of hot days with extremely high humidity and the need for some very cold foods.  This is a great melon fruit salad for lunches, snacks or dessert.  Simple to make with a refreshing burst of lime.  Leave out the rum if it is for the children.  I packed it up to take to the beach to enjoy some cool breezes by the water at sunset and was greatly appreciated.

Melon and Blueberry Fruit Salad in Rum-Lime Sauce

Ingredients

  • 1/4 Large Water Melon
  • 1/2 Cantaloupe Melon
  • 1/2 Honeydew Melon
  • 1 pt. Fresh Blueberries
  • 4 Limes (1 t. lime rind and 4 T. lime juice) (save 1-2 for garnish)
  • 1/2 C. Rum
  • 1/3 C. Sugar
  • 1/4 C. Water
  • Fresh Mint (for garnish)

  

Preparation

  1. Cut the cantaloupe, honeydew and watermelon in bite size pieces
  2. Add the melon and blueberries to a large bowl
  3. In a small saucepan mix the sugar with the water and bring to a boil, reduce heat and simmer for about 5 minutes
  4. Add the lime rind and let cool at room temperature
  5. Stir in the lime juice and the rum
  6. Pour the sauce over the melon and berries and chill covered for several hours
  7. Serve in chilled bowls and decorate with lime and mint
  8. (Or pack in chilled canning jars to take to the beach or for a picnic)

Packed up in large or small canning jars to take to the beach.
