Chicken, Grapes and Slivered Almond Salad

For me there can never be enough salad recipes with chicken.  So many people do not eat meat or fish so through the years I have gathered quite a gaggle of delicious chicken salad recipes.  This one has tasty velvet lettuce, crunch with the grapes and almonds and the flavorful chicken bringing it together.  The original recipe called for green grapes but any type of grape is wonderful for this recipe and since I live in Florida full-time now I may have to find some other fruits to go with it as well.  If you have any ideas for chicken salad I would love to hear from you.

 Chicken, Grapes and Slivered Almond Salad


  • 4 Chicken Breasts (Boneless and Skinless, cut in bite size pieces)
  • 4 C. Red Seedless Grapes (sliced in halves)
  • 1 C. Slivered Almonds (or chopped almonds, and/or other nuts)
  • 1 C. Mayonnaise
  • 1 Head of Lettuce (Red Leaf or your preference)
  • 2 T. Fresh Parsley (chopped)
  • Salt and Freshly Ground Pepper

Poached Chicken” for the salad


  1. Chill salad plates
  2. Combine chicken, grapes, nuts and mayonnaise together
  3. Add mayonnaise, parsley,salt and pepper and toss gently
  4. Serve on chilled salad plates
