Chicken and Tomato Pesto Salad

There always seems to be extra pesto left when I make some type of pasta with pesto and this salad is my favorite to use the remainder.  If you don’t make your own pesto I have also made it with prepared pesto as well.  The flavor is sharp with pesto and sweet with the tomatoes.

Chicken and Tomato Pesto Salad 

Ingredients

  • 4 Chicken Breasts (Boneless and Skinless)
  • 4 Large Tomatoes
  • 3/4 C. Mayonnaise
  • 3/4 C. Pesto
  • 1 Head of Lettuce (Red Leaf Lettuce used here)
  • Salt and Freshly Ground Pepper

 

  Preparation

  1. Prepare “Poached Chicken” and then chill the chicken (at least 2 hours)
  2. Cut up tomatoes in bite size pieces
  3. Mix the mayonnaise and pesto together
  4. Add the mixture to the mayonnaise and toss thoroughly
  5. Add the tomatoes to the chicken mixture and toss gently
  6. Salt and pepper to taste
  7. Place on a bed of lettuce to serve
