Lemon Curd

My new “Bearss Lemon Tree”

Summer is here whether it says so on the calendar or not.  Lemon desserts of many types and variations are prolific.  With the summer heat arriving early I have been making quite a few lemon based desserts which are fresh, crisp and a little tangy for a great sweet finish to meals.  I lost my lemon tree in a hurrican a few years back but recently just bought a “Bearrs Lemon Tree” which I will not be planting in the ground until next spring.  Now I just want to care for it in a container and decide the best location in my diminishing yard space for a permanent home .  But a friend of mine gave me some Bearss lemons from her yard a few days ago and I was inspired to make this Lemon Curd, but any lemon you have or might buy will make a delicious dessert.  This is a very simple recipe which you can use as is or turn it into something else with many different types of fruits, berries, ice creams, etc..  You can buy Lemon Curd in jars and some of them are very good, but making your own is better than any that I have ever bought.

Lemon Curd


  • 6 Eggs
  • 2/3 C. Sugar
  • 2 Lemons (grated zest)
  • 1 C. Lemon Juice
  • 1 1/2 Sticks Unsalted Butter (cut into small pieces)
  • 1 t. Vanilla


  1. In a medium saucepan whisk together the eggs, sugar and lemon zest until a light color
  2. Add the lemon juice and butter and cook while whisking  over medium heat until the butter is melted
  3. Continue whisking until the mixture is thickened and simmer a few seconds
  4. Strain through a medium mesh sieve into a bowl and stir in the vanilla
  5. Cool, cover and refrigerate until ready to serve
  6. Serve in individual ramekins with blueberries as garnish (any fruit goes well with Lemon Curd)

      Thank you so much. I am just learning about food photography, but I think I am skilled in animal and nature so it does help.
