White Bean Soup with Ham

This soup was always one of my favorites at  Ristorante Nino in Roma, Italy.  It was a favorite dinner spot after a long afternoon of shopping on the streets near Piazza di Spagna.  (It was all about food and shopping.)  Of course there are so many wonderful restaurants nearby, but here we felt a little bit like family through all the years that we frequented this restaurant.  We never had reservations but the waiters all knew us and were always able to fit us in fairly quickly.  It was usually winter when I flew to Rome so a hearty soup was a great way to begin another fantastic meal.  There are so many wonderful things on their menu that I could not begin to name them, but I will cook a few of their selections for you on these pages soon.  I have no idea what their recipe for this soup is since unfortunately I never asked them.  I often make this soup when I have leftover ham that is begging to get in a pot.

White Bean Soup and Ham

Ingredients

  • 1 T. Butter
  • 2 Slices Bacon (cut in small pieces)
  • 2 Carrots (peeled and finely chopped)
  • 2 Stalks Celery (finely chopped)
  • 1 Medium Onion (finely chopped)
  • 2 Garlic Cloves (finely chopped)
  • 2 C. Ham (cut in bite size pieces)
  • 4 Cans Cannellini Beans (washed and drained)
  • 3 C. Chicken Broth
  • 1 C. Heavy Cream
  • Salt and Pepper as desired (careful with the salt, ham will add salt)
  • Fresh Parsley for Garnish

  Preparation

  1. Cook bacon on medium heat for 2-3 minutes.
  2. Add butter, carrots, celery and onion and saute until tender.
  3. Add ham and warm.
  4. Add beans and broth and simmer approximately 1 hour.
  5. Add heavy cream and heat thoroughly
  6. Salt and pepper to taste

A nice loaf of crusty bread is always in order with this soup.

    Cold wheather is coming all next week (after a week in the 70’s) and a big pot of soup might be just the ticket. Plus a cup of cream tells me it’s rich and satifying!
    Gotta feel sorry for those that live in those freezing cold states. LOL

    Your are fast! Glad your daughter enjoyed the soup. Your soup looks beautiful and I love to cook to bring back so many nice memories.
