Almond Macaroons

One of the easiest cookies to make in the world which is an old-fashioned favorite, whether they be for everyday snacks or super special holiday treats. I made these for Valentine’s Day but quickly had to make another batch this weekend. Almond lovers will appreciate the pure almond flavor for breakfast when you cannot get your hands on some ‘almond croissants’.
Almond Macaroons
Ingredients
- 1 7 oz. Box Odense Almond Paste (grated)
- 2/3 C. Granulated Sugar
- 1/4 C .” scant” Egg Whites (approx. 1 1/2 eggs)
- 2 T. Powdered Sugar (optional)
- 16-20 Almonds (optional)
Preparation
- Preheat oven to 350 degrees
- Combine the Almond Paste in a mixing bowl, beat until the texture of crumbs
- Slowly add the egg whites and mix on low until well mixed; beat for about 3 minutes on high until the mixture is creamy
- Drop a teaspoon size of batter onto cookie sheet (2″ apart)
- Sprinkle with the powdered sugar and press one almond into the center of each cookie
- Bake for 13-15 minutes (lightly golden); cool completely
Makes approx. 16 – 20 cookies
