Lemon and Blueberry Cake

Cake and coffee to watch DNC2012 tonight (cocktails, beer and wine also provided). I was not very political in my younger adult years, although I read about what was happening in every newspaper and magazine I could get my hands on in every country. I missed some of the details being overseas half of each week but now that I am retired I have more time to focus on some of the important issues. So we’re cutting the cake at 9 pm with a few friends and hope you have already registered to VOTE. And call a few family members and friends to remind them too.
Lemon and Blueberry Cake
Ingredients
- 1/2 C. Unsalted Butter (melted)
- 1 1/2 C. Blueberries
- 1/2 C. Fresh Lemon Juice (approx. 3 lemons)
- 1 C. Flour
- 1 t. Baking Powder
- 1 t. Salt
- 2 Whole Eggs/Plus 2 Egg Yolks
- 1 t Vanilla Extract
- 1 C. Sugar
- 1 t. Grated Lemon Zest
- Confectioners Sugar (to dust top of cake)
Preparation
- Preheat oven to 350 degrees/butter a 9″ round cake pan
- Mix flour, salt and baking powder in a small bowl
- In a large bowl beat the whole eggs and egg yolks until blended
- Add the butter, sugar, lemon juice, vanilla and lemon zest
- Coat the blueberries in the flour and set aside
- Gently stir in the flour and blueberry mixture
- Spoon into prepared pan and smooth the top
- Bake approx. 30-35 minutes/remove and cool in pan for about 15 minutes
- Invert cake onto plate; invert again onto wire rack and cool completely
- Plate and dust with confectioners sugar
- Garnish with a slice of lemon
