Pan Grilled Dolphin

Fresh, clean and light for a simple summer dinner. Lately the only hot meals I am interested in will be making fish, as it will take just a few moments to cook. I have always felt sorry for those that do not like fish or say they cannot cook fish. You are so lost.
Pan Grilled Dolphin
Ingredients
- 1 lb. Fresh Dolphin (Mahi-Mahi)
- 2-3 Lemons
- 2 T Olive Oil
- 3 T. Unsalted Butter
- Salt and Pepper
- Fresh Parsley (for garnish)
Preparation
- Salt and Pepper Fish
- Squeeze 1 lemon over fish
- Heat grill pan with oil, butter and juice of 1 lemon
- Put dolphin in hot pan and cook for about 2 minutes on each side
- Serve immediately and garnish
Served here with Scalloped Potatoes and Roasted Tomatoes
