Nectarine and Strawberry Crunch

The summer heat is here and I sometimes think that all I can eat is chilled fruit. Some combinations of different fruits are just better than others. This is one of the greatest. This simple crunch is so good you will make it many times with many different fruits and nuts.
Nectarine and Strawberry Crunch
Ingredients
Filling
- 5 Nectarines (sliced thinly)
- 1 C. Strawberries (quartered)
- 1 1/2 C. Lt. Brown Sugar (lightly packed)
- 1/4 C. All-Purpose Flour
- 6 T. Cassis
Topping
- 1 1/2 C. All-Purpose Flour
- 3/4 C. Sugar
- 3/4 C. Lt. Brown Sugar (lightly packed)
- 1/2 t. Kosher Salt
- 1 C. Rolled Oats
- 1/2 C. Walnuts (chopped)
- 1/2 lb. Unsalted Butter (cold and diced)
Preparation
- Combine the nectarines, strawberries, brown sugar, flour and cassis; pour mixture into a 12″ x 8″ baking dish and set aside
- In a large bowl combine the flour, sugar, brown sugar, salt, oats, walnuts and butter; mix on low-speed until mixture is crumbly; cover the top of the nectarine and strawberry mixture
- Bake at 375 degrees for 40-50 minutes (mixture will be bubbling and the top will be browned
Optional Garnishes: Ice Cream, Whipped Cream, Greek Yogurt
