Blueberry Betty

I really love my blueberries in the morning with cereal and yogurt but if friends are visiting this is even better. Don’t bother to go pick up donuts in the morning because making this will be much quicker and a lot better. Another simple treat for your fruit serving of the day.
Blueberry Betty
Ingredients
- 4 C. Fresh Blueberries (washed and drained)
- 3 T. Unsalted Butter (melted
- 2 C Fresh Bread Cubes (Baguette used here)
- 1/2 C. Brown Sugar
- 1 t. Ground Cinnamon
- Pinch of Nutmeg
- 1 T.Fresh Grated Lemon
- 2 T. Fresh Lemon Juice
- 1/4 C. Hot Water
Preparation
- Butter baking pan and preheat oven to 350 degrees
- Toss melted butter and bread cubes; combine brown sugar, cinnamon, nutmeg and lemon zest/set both aside
- Add 1/3 bread crumbs in baking dish; sprinkle blueberries and add 1/2 of sugar mixture/Repeat/top with the last third of crumbs
- Combine the lemon juice and water and pour evenly over top
- Bake for approx. 30 minutes
- Serve warm as is or top with Whipped Cream, Ice Cream or some Heavy Cream

This looks great and I’ve never made a brown betty or a blueberry one.
