Gingerbread Bars

It is the time of year for Gingerbread and I do love those spices.  These are not cookies and not quite cake but now I have to decide which I like better.  When my children were young of course we made the Gingerbread Men (now People) but some years I do not make them anymore.  Yet still, craving those flavors this recipe will satisfy all your dreams and not take the entire evening to make (especially when you do not have those wonderful little hands and expectant joyful faces around to help you decorate.

Gingerbread Bars

Ingredients

  • 2 C. All-Purpose Flour
  • 2  t. Ground Ginger
  • 1/4 t. Ground Cinnamon
  • 1/4 t. Ground Nutmeg
  • 1/4 t. Ground Cloves
  • 1/2 t. Baking Soda
  • 1/2 t. Salt
  • 10 T. Unsalted Butter (room temp.)
  • 3/4 Dark Brown Sugar (Light Brown Sugar used in this recipe)
  • 7 1/2 T. Granulated Sugar (divided)
  • 2 Lg. Eggs.
  • 1/ 4 Light Molasses
  • 1/4 C. Confectioners’ Sugar (optional for dusting)

Preparation

  1. Preheat oven to 350 degrees; line a 15x10x1″ baking sheet with parchment paper; butter and flour
  2. In a medium bowl add 2 C. flour (remove 2 T. flour and set aside), all the spices, baking soda and salt and whisk together
  3. Beat butter, brown sugar and 6 T. sugar in a large bowl with a mixer until fluffy
  4. Beat in the eggs one at a time; add molasses and combine thoroughly
  5. Add dry ingredients to the butter mixture and beat to blend
  6. Spread batter evenly in the prepared pan; sift the 2 T. flour evenly over batter; sprinkle the remaining sugar over the top as well
  7. Bake 18-22 minutes until golden brown (until toothpick comes out clean from center)
  8. Remove from oven and cool completely on rack; trim edges and cut into bars (or cut diagonally-see below)
  9. Cut and plate; sprinkle with Confectioners’ Sugar (we like that here in Florida/snow reminders) *

* Save the crumbs (or crumble up a few bars for ice cream toppings or crust for pies and cheesecake)

(Makes 24-28) Double this amount for mini-gingerbread bites

    The things is, after I made these bars and brought them to work, like 5 people asked me for the recipe.
