Asparagus and Ham Frittata

Enjoying the asparagus season in as many ways as possible this month and this frittata is a keeper. Have it for dinner and a great treat in the morning too.
Asparagus and Ham Frittata
Ingredients
- 1 Bunch Asparagus (washed)
- 1/2 lb. Ham (cut in 1″ pieces)
- 5-6 Lg. Eggs
- 2 T. Whole Milk
- Salt
- Freshly Ground Pepper
- 1/2 C. Swiss Cheese (diced)
- 1/2 C. Parmesan Cheese (grated)
- 1 T. Unsalted Butter
- Fresh Parsley (for garnish)
Preparation
- Blanche the asparagus and set aside
- Whisk the eggs with milk, salt and pepper; add ham and 1/2 C. cheese and mix thoroughly
- Preheat the oven to 350 degrees
- Pour egg mixture into an oven proof pan and melt 1 T. butter; add the egg and ham mixture; add the asparagus gently
- Heat until mixture is set; add the Parmesan cheese to the top and transfer to the heated oven and finish the frittata (about 10 minutes)
- Turn to Broil and broil about 1-2 minutes
- Serve on warmed plates and garnish with parsley
