Baked Potato with Sour Cream and Caviar

Baked Potato with Sour Cream and Caviar
Ingredients
- 4 Baking Potatoes
- 1-2 T. Unsalted Butter plus 2 T. to mash
- Sea Salt
- 12 oz. Sour Cream (divided)
- 1/4 C. Chives (chopped)
- 4 oz. Caviar
- Fresh Parsley (for Garnish)
Preparation
- Preheat oven to 350 degrees
- Wash and dry potatoes
- Rub potatoes with butter; sprinkle with salt
- Bake for about 50-60 minutes; remove and let cool until able to handle
- Remove potato and put in a bowl
- Add 2 T. butter, 4 T. Sour Cream, some chives and roughly mash
- Return mashed potato mixture to potato
- Prior to serving return to oven and heat approximately 10-15 minutes to heat thoroughly
- Serve on warmed plate; add a T. of Sour Cream and a large dollop of caviar on top of each potato
- Garnish with parsley
