Simple Tomato Sauce (Marinara)

Here’s a great and simple tomato sauce to have alone or as the beginning of many sauces you may decide to make. Just by adding additional and different ingredients you will have hundreds of sauces ready in moments. Double this and freeze half of it and next week you will enjoy another meal with no time involved. (Will last one week in the refrigerator tightly covered and 6 months in the freezer).

Simple Tomato Sauce (Marinara Sauce)
Ingredients
Preparation
- Heat the oil in a large pan on medium; stir in the onion, carrot, and celery
- Reduce heat to low, cover and cook for about 20 minutes (until vegetables are softened)
- Remove cover, add the garlic and cook on medium for a couple minutes
- Add the tomatoes and the juice; mash the tomatoes and add the tomato paste and basil
- Season with salt and pepper to taste; reduce heat to low and simmer uncovered until thickened (about 15 minutes)
- Put the sauce through a food mill or blend with an immersion blender if you would like a smooth sauce (Optional)
- Serve immediately or store in a sealed container in the refrigerator or freezer
(Makes about 4 Cups Sauce)
