Rustic French Fries

These french fries go with so many different entrees. I love them with a great roasted chicken, burgers and Maine lobster (or Florida lobster tails). Once you par boil the potatoes they are quickly fried at dinner time just before you are ready to sit down to eat. Pretty good as just a snack too.
Rustic French Fries
Ingredients
- 4 Large Potatoes (1 Potato per person)
- 1/2 C. Canola Oil
- 4 0z. Unsalted Butter
- Salt and Pepper
Preparation
- Wash and cut potatoes. (For rustic, leave on skins, cut fairly large (6 per potato))
- Par boil at medium heat (simmering for 7-10 minutes, remove and let sit til ready to fry.
- Heat oil and butter in frying pan.
- Add potatoes oil and butter and fry on all sides til golden brown
- Remove to plate covered with paper towels and season with salt and pepper.
