Herb Roasted Fingerling Potatoes

They not only look pretty they even taste better than they look. My local grocer does not have them weekly but when they do they certainly go on the menu. Add a handful of fresh herbs and oil and the subtle flavor changes will enhance any plate. Be sure to get a nice mix of the different colors and shapes to add additional beauty to the bowl. They are a little more expensive but certainly worth the sweet and tender taste.

Herb Roasted Fingerling Potatoes
Ingredients
- 1 1/2 lbs. Fingerling Potatoes
- 1/4 C. Olive Oil
- Fresh Rosemary (chopped)
- Fresh Sage (chopped)
- Fresh Thyme (chopped)
Preparation
- Preheat oven to 350 degrees
- Wash potatoes and put in a bowl
- Add the oil, chopped herbs, salt and pepper and toss thoroughly
- Place in a baking dish and bake 35-45 minutes
- Remove from oven and serve
