Green Onion Stuffed Potatoes
Take a few extra moments and make some stuffed potatoes. Your guests will love you and you will love your potatoes. These are stuffed with green onions but any combination with the potato is a true winner. In one way (in my mind some days) it seems like too much work, but if you plan and bake the potatoes first and early they are ready at the same time as most dinners. They are a little bit more work than a simple baked potato, but the taste goes way beyond my expectations every time I make them.
Green Onion Stuffed Potatoes
Ingredients
- 4 Potatoes
- 4 T. Butter
- 4 Green Onions (chopped) (plus a few for garnish)
- 1/4-1/2 C. Milk
- 1/2 C. Cheddar Cheese (or more)
- 1/2 C. Sour Cream
- Salt and Pepper
Preparation
- Preheat oven to 350
- Wash and prick potatoes
- Bake for approximately 50-60 minutes
- Remove from oven. Cut in half and scoop out potato
- Add butter and milk and mash
- Add chopped onions and salt and pepper
- Stuff potato skins with mashed potato and onion mixture
- Top with grated cheddar cheese (Recipe can be made in advance to this step)
- Put back in oven and heat for approximately 15 minutes until cheese melts
- Plate with green onions and sour cream and serve.
