Potato Patty, Spinach and Fried Egg

What a great way to start a Saturday or Sunday morning! I love it when I have some leftover mashed potatoes (which does not happen often). Breakfast can be ready in moments and sometimes I don’t even saute the spinach. Just put it on the plate and the heat from the potato and egg will wilt it enough. If you love these ingredients you will love this breakfast as it is better than any diner can do. It is the 2 a.m. meal you might be looking for when time is of the essence, hunger is great and flavors need to be met.
Potato Patty, Spinach and Fried Egg
Ingredients (per person)
- 1/2 C. Mashed Potatoes (leftovers)
- 2 1/2 T. Butter
- 1 C. Spinach
- 1 Large Egg (2 if you are really hungry)
- Salt and Freshly Ground Pepper
Preparation
- Form mashed potatoes into a patty
- Melt 1 T. butter in a pan, add the patty and heat thoroughly
- In another pan put 1 T. butter and spinach in and wilt for a couple of minutes, plate the spinach
- Add the 1/2 T. butter to the spinach pan and fry the egg, add salt and pepper
- When egg is ready, add the potato patty on top of the spinach, then the egg
- Serve immediately
